Ingredients:
• 1 medium head cauliflower, cut into bite-sized pieces
• 2 cloves garlic, chopped, or ¼ tsp garlic powder
• ⅔ cup potato flakes
• ¼ tsp salt, or to taste
• Ground black pepper, to taste
• 1 tbsp unsalted butter
• ¼ cup heavy cream or milk
• 2–3 tbsp fresh parsley, chopped (optional)
Equipment:
Medium pot or steamer, cutting board, knife, blender or potato masher, clean towel, strainer, large bowl
Directions:
- In a medium pot over high heat, bring the cauliflower and water to a boil. Cook for 5–10 minutes or until tender. Alternatively, steam the cauliflower until tender, about 5–10 minutes.
- Remove ⅓ cup of the cooking water and set it aside. Drain the cauliflower and absorb excess moisture with a clean towel. (If steaming, reserve ⅓ cup of hot water.)
- Add the cauliflower, ⅓ cup water, garlic, potato flakes, salt, and pepper to a large bowl. Mash with a potato masher until smooth, or blend on medium–high until smooth. Taste and adjust seasonings.
- Transfer the mixture to a serving bowl. Add butter, cream, and parsley. Stir to combine. Enjoy!
